"My crops are typical of Valois - wheat, sugar beet, malting barley and colza. My wife Chantal and I have diversified the farm by growing fruit and vegetables that we makes into condiments. We began with a family recipe for candied pear. It's a marvellous accompaniement for foie gras, white meat and game, as well as goat's cheese - it really livens up a dish! Our latest creations are sweet-and-sour courgettes, turmeric vinegar and raspberry vinegar. With all this going on, I'm happy to give work to local housewives, even if it's only for a few hours. Last autumn I planted 150 pear trees between two of my fields on the plateau. There are good weather conditions first of all and you also get the pleasure of developing the countryside. I'm rediscovering somewhat the true meaning of the word "farmer".
