"What I've found interesting about edible flowers is introducing or re-introducing people to these products. It's about bringing recipes that people have forgotten back to the modern table. For example, with acacia fritters people say to me, "yes, I remember the taste, my grandmother used to make it!" What I'm actually doing is giving them back forgotten tastes and colours. They already had the knowledge, I just have to remind them of it. I also produce "old" vegetables - this is the variety I put on plates! Instead of saying to myself, "What am I going to make for dinner?" the question is, "What recipe am I going to use to cook these vegetables?"
