"Five young farmers are behind the 'Graine de Pain' baguette. These farmers were aware that their line of work, often criticised, is badly understood. As responsible professionals we believed that we should be the ones to act and take the initiative at our level to build a bridge towards the public and thereby show the values of our trade. Our idea was that by setting up a short production cycle (wheat, flour, bread), we could show that our activity is legitimate. We met with millers and then convinced the bakers. Today, there are 25 bakers who buy the flour made with our grain. In turn, we regularly stage demonstrations in bakeries; the customer tastes the bread made with our wheat. We explain the colour. The air in the dough is what makes it different from other kinds of bread. The work of farmers has to develop. We have to make our way of working transparent; people need to understand."
