“The place where we are has a very rich history. Legend says that the mother of Saint Rémy is buried around here... You know, it’s Saint Rémy, archbishop of Reims, who baptised Clovis in the 5th century. Whatever the case, the current building, in sandstone on limestone cinder blocks, dates from 1577. These old stones demand respect! What’s more, we’re next to the national forest. This is why we completely covered the 1,600m² of stables that we built in wood cladding. There’s no ugly sheet-iron round here! You have to respect the environment and heritage and set an example where possible.”
