“The Albert Waffle was the speciality of Monsieur Joachim (a native of Guadeloupe who moved here in 1924!). He retired in 1957 and the waffle was forgotten about. Forty years later, gastronomic heritage enthusiasts traced and contacted Monsieur Joachim’s daughter, who had the secret. They managed to convince her to reveal the famous formula so that the delicacy could be brought back to life. Today I’m proud to make this product that is defended by a brotherhood and reflects my town’s history.”
