“Situated in the heart of Santerre - a region that produces excellent potatoes and the birthland of Parmentier -, the farm has specialised in potatoes since the 1980s. We grow different varieties, such as the Charlotte, Almond, Cherie, Ratte and Vitelotte. The latter is a blue potato that is highly valued by restaurateurs and gastronomes. In addition to its characteristic chestnut flavour, it is one of the few sources of the colour blue in cooking. Whether it’s used in crisps, a purée, Pomme Duchesse or a salad, it helps produce entertaining and colourful cooking. Although its origin is mysterious, the Picardian land suits it well. It’s our mascot! Pierre-Marie Wynands, a restaurateur from Gamaches who works with the region’s products a lot, uses it in a delicious recipe: ratte and vitelotte parfait with smoked fish. Today there are also lots of consumers using it to surprise their guests!”
