“My husband is originally from the village and 20 years ago we decided to set up a Maroilles cheese dairy. It’s a strong cheese with a guaranteed origin label, a hard texture and washed crust that can only be made in Thiérache. We had to learn everything in order to guarantee that we made cheese with a consistent quality, adapt our herding system, the feed and even the breed of cows.
We only use milk from the morning milking, as soon as it leaves the cow’s udder. This eliminates the risk of microbes developing due to storage. We have also renovated a cellar dating from 1848 for the natural maturing process, which lasts from 2 to 4 months.”
