“I feel I’m the ambassador of my town. My wife and I are originally from Burelles, our family has been here at least since the revolution. History is present here like in no other region. In Thiérache, the people have lived through the 100-year wars, the 30-year wars and of course the most recent wars. We’ve retained unique traces of these: our fortified churches. Without wanting to be biased, the Burelles church is the most beautiful! The cooking at our inn reflects our history. It’s Thiérache cuisine, updated. It gives me pleasure to say that we provide gourmet regional gastronomic cuisine. We use a whole range of products, from cider and Maroilles cheese to butter, cream, poultry, chicory and red berries.”
