“We don't produce much but what we produce is good. That is our philosophy. We have Normandy cows which, as everyone knows, provide milk with a higher fat and protein content and of better quality. Consequently, the cheese is better. Our speciality? “Le Petit Belloy, a small, white round cheese made from unpasteurised milk, of course, but we also produce crème fraîche, fromage blanc, butter and natural and fruit yoghurts as well as “Tome de Picardie” which we mature in hay. The recipe is old and comes from the area. It was rediscovered by farmers in the Bray area (Editor’s note: cf. p…). You know that by making our produce from unpasteurised milk, real differences in taste are noticeable, depending on the season with the changes in the cows' feed. Here, close to the sea, we have the advantage of leaving our cows to pasture over long periods and that is not possible everywhere. Result – the products speak best for themselves. So try them!”
