RED FRUIT SORBETS FROM BERNARD AUTRICQUE
"A few years ago, I decided to start making sorbets. We now have about 5,000 sqm of field strawberries. These are varieties that start in May until late-July. We begin with cigaline, a first cousin of the gariguette, then round strawberries, specially selected. We produce strawberries under the name of Sorbenoy, which originates from Noyon, the cradle of red fruit. To make our ices, we take a dozen flavours (strawberry, raspberry, blackcurrant, red currants, rhubarb) and we create a few combinations such as rhubarb & strawberry, rhubarb & blackcurrant, or a blend of four red fruits. It's the quality of the fruit that determines the taste of the sorbet. We don't add colourings, additives or preservatives. We respect the seasons and offer an authentic product."
