At Reuilly, between Château Thierry and Dormans, the local talent Martial Berthuit has been cooking up an inventive cuisine at his inn called Le Relais, fully respecting local produce and seasons while managing to combine daring with tradition.
Enjoy a warm and authentic welcome here at the inn. Martial Berthuit is a man from the Picardie Champenois bathed in the Valley of the Marne and dotted with hills covered with Champagne vineyards. From the huge veranda where meals are served, you can never tire of this grand and fascinating landscape, completely bathed in light.
And suddenly you begin to understand why this talented chef, awarded a star in 1992 and picked up by the greatest guides has succeeded right here“ Our inn is only 100km from Paris and the area is popular with foreigners. The menu changes every five to six weeks because the produce changes with the seasons” says Martial Berthuit. “Our cuisine is gastronomic with a classic base, but revisited with personal touches, and tastes and flavours we try to recapture.
We work a lot with fish and shellfish, but also with pigeon, raised locally, calf sweetbreads, served studded with crunchy carrots and accompanied by a Swiss chard stew. Naturally, there are also the classics, such as a selection of three duck foie gras, or foie gras with ratafia. »
Pan fried asparagus, rolled in parmesan and served with shavings of Serrano ham; Scallop carpaccio with algae, apples, chicory and parmesan, lemon vinaigrette; Pan fried scallops served with cress risotto and slices of chorizo; Red mullet with foie gras, mash potatoes with olive oil; Praline Paris-Brest, with citrus fruit and a crystallised orange sorbet...
Martial Berthuit doesn’t lack for ideas or talent, and he never gets tired of surprising us, but always
with delicacy, taste and refinement. Not to forget the local wines, selected and aged with the talent of excellence.
