A place for foodies
Ficelle Picarde: a delicious crêpe-based dish to enjoy on winter evenings.
Ingredients (for 6 servings):
- 250 g mushrooms, cleaned with a mixture of water and vinegar
- 12 slices of ham
- 50 cl single cream
- 75 cl light crêpe mixture
Preparation:
- Prepare 12 thin crepes, only lightly browned.
- Chop the mushrooms and sweat them in butter with shallots, add salt, pepper and a pinch of nutmeg.
- Reduce the juices and add a bit of cream.
- Spread out crêpes, cover with a slice of ham, garnish lengthwise with mushrooms and roll up the crêpe tightly.
- Place the ficelles in a buttered gratin dish.
Top the crêpes with remaining cream and sprinkle with grated Gruyère cheese.
Place in the oven to brown and serve very hot.
The ficelle goes perfectly with a nice salad and can be washed down with a beer.
